   One popular option is the Solstice Supreme, SSH55-3FD-SSTC model from Pitco, with an included solstice filter drawer system. It is easy to use and will provide you with large amounts of fried goodies to serve your customers. The tank, front, door, and sides are all constructed of stainless-steel and it stands on 9" adjustable legs. A set of twin fry baskets are included per fry pot allowing you to cook three completely different recipes without worrying about cross contamination. Then, when you're not cooking, you can put those baskets up the basket hanger. The basket hanger is removable, without the use of tools.
 
   The I-12 Technology uses no blower or ceramics in its highly efficient design, with a patented self-cleaning burner and down draft protection. This model features solid state temperature controls that include a melt cycle, boil out mode, and a matchless ignition. The matchless ignition will automatically light the pilot when the power is turned on. This nifty feature will save you money during the off times, and who doesn't like a few extra bucks in their pocket every month.
 
   This is a tube style fryer, which will allow small crumbs and debris to fall down into the cool zone. These types of fryers work especially well when you're frying foods with high amounts of sediment or that are breaded. However, that doesn't mean you can't fry other products, such as French fries, or frozen foods. This style is extremely versatile, and suited to fry just about anything you can imagine. The tubes also provide even heat distribution, so everything comes out equally tasty and uniform.    The included filter has a simple two-step operation that is easy to follow and understand. The filter pan is stainless with rear wheels. It includes a filter pan lid, a cleaning brush, a crumbs scoop, a shovel scoop, filter paper envelope starter pack, and a filter powder sample.

What are the required clearances?It has a minimum front clearance of 30" and a floor clearance of 6". If around combustible material, the sides and rear require a 6" clearance. Do not block or restrict flue gasses from flowing into the hood or install vent hood drains over the flue.
 
Are there any electrical requirements for the filter?Yes, it requires a voltage of 115 and has one power cord.
